mini cannoli cups

yesterday was another speedy run on the treadmill.  
mile 1 - 8:08 minutes
mile 2 - 15:24 minutes (7:16 pace)
mile 3 - 22:38 minutes (7:14 pace)

I'm really happy that I had negative splits.  My speed ranged from 7.2 to 8.5 throughout the 23:30 minutes.  I was one sweaty mess when I jumped off the treadmill but I'm sure it would've been way worse had I run outside.

Once I got home it was time to bake!  I found an easy recipe for cannoli cups from the blog, Gimme Some Oven. 

I followed the recipe almost 100% ... changes I made were to halve the recipe, use 2% milk instead of whole milk, omit the almond extract, and use fat free ricotta cheese.
The cannoli cups were easy to make and really good.  The only drawback were the wonton cups were a little too crispy for my liking but that didn't stop me from eating 2 last night ... and possibly the rest of them today :)  Stop by her blog to get the full recipe!

  1. Good run, I like increasing on the td too. I usually do 4,3,2,1 min increasing speeds. Have you decided if you're going to train for a half this fall? You've gotten back in fast running shape so quickly!!
