Sausage and Peppers with Pasta

Tonight's dinner was my take on sausage and peppers.

First I diced 1 cup of tomatoes and simmered it with olive oil, oregano, basil, and parsley with a little kosher salt and minced garlic.

Then I chopped half of a yellow bell pepper and half of green bell pepper (a little over 1 cup).

I took the casings off 2 sweet Italian sausages and cut them into small rounds. I combined the peppers and sausage into a pan with a little olive oil.

After about 15 minutes I added the "tomato sauce" to the pan of sausage and peppers. I cooked some pasta, drained it, and added it to the pan. As a finishing touch I generously added freshly grated parmesan cheese and some shredded mozzarella cheese to the top.

Served with some garlic bread this was one heck of a meal.

And yes I had 3 pieces of bread ... I heart garlic bread.
