Waiting around in the waiting room

One of the worst parts of going to a doctors office is having to wait in the waiting room. Luckily for me I brought something to keep me entertained. And no, it's not a pair of knitting needles ... Although I did notice a fellow "waiting roomer" knitting away happily.

I started reading a new book ... Born to Run by Christopher McDougall. I heard some great things about it so I'm expecting big things.

Will run for a bagel

This morning Ryan and I headed to the YMCA bright and early ... Actually it was still dark out.

He headed down to the weight room and I went straight to the treadmill.

I walked for 1 minute as a warm up then ran for 30 minutes. I finished off my run with 1 minute of walking as a cool down.
*3.54 miles in 32 minutes

On my walk to work I stopped by Einstein's for a bagel and coffee. Nothing beats a toasted everything bagel with garlic cream cheese. Mmmm.

A little leg attention

I'm done with my workout today and check out how early it is:

Not bad for a Saturday morning. I headed to the YMCA for a run this morning and finished 3.1 miles in 28 minutes (1 minute walking warm up, 26 minutes running, 1 minute walking cool down).

Then I did something I hadn't done in forever ... A leg workout!
Using a pair of 5lb weights I did a total of 30 squats and 30 lunges on each leg.

Now time to make some breakfast!!

(almost) vegan blueberry muffins

Today for dinner Ryan grilled some chicken while I worked on some sides. I used a couple of potatoes I bought from Trader Joe's to make oven baked wedges. I also heated up some frozen corn (not hard but a decent side). To go along with the wedges I made a garlic aioli using freshly minced garlic, some mayo, a dash of white vinegar, some dried rosemary, salt and pepper.

For dessert I used a recipe from my new cookbook ... Peas and Thank You by Sarah Matheny.

I followed the "recipea" for Blueberry streusel muffins.

Only differences:
- white all purpose flour was used instead of whole wheat pastry flour
- regular unsalted butter was used instead of vegan margarine

Other than that I followed as closely as I could. I used a mini muffin pan for bite sized bites.

Such a great and easy recipe!

World's smallest ice-cream cone

After work I headed to the YMCA to watch some Food Network. And maybe to run some miles.

my first earthquake!

while sitting at work today I felt my chair moving ... didn't really think anything of it until those around me started saying they felt the movement also.  after some research we realized there was an earthquake that shook the eastern coast with a magnitude of 5.8!

First signs of fall?

This morning was gorgeous here in Charlotte. There was a slight breeze and the temperatures were right around 68 degrees. Could this be a sign that summer is almost over?

I'm starting my day with a chai latte from Dilworth Coffee. Mmmm so good after skipping caffeine yesterday.

After taking a few days off from the gym while in NYC, I headed to the YMCA last night for some treadmill running.

5 napkin burger

Today's delicious cheeseburger experience hails from NYC. After many visits to the big burger, I mean apple, I finally tried 5 napkin burger.

Holy amazing. I split the burger with my pal Aaron cause it seemed too massive. Huge burger topped with caramelized onions, melted gruyere, thick slices of bacon, and a garlicky rosemary aioli.

I definitely needed more than 5 napkins after eating this thing. So messy but so delicious. Best burger experience in NYC yet.

Packing light

Today I managed to run a few miles at the YMCA. I walked for 2 minutes then ran for 8 minutes, and alternated like this for 3 cycles.
- total miles 3.05 = 30 minutes

Once I got home Ryan and I headed back out to pick up some food at Mellow Mushroom (sorry no photos ... Needless to say it was delicious).

The pizza was great fuel to help me pack for my trip to NYC tomorrow. I'm heading up there to see a couple of my friends, Jacqui and Jen.

All of this was what I picked out for my 45 hour trip ... A maxi dress, a pair of jeans, 3 tops, a pair of shorts, a "fancy" pair of sandals, pajamas, and underwear. I'll add my toiletries in the morning.

I fit it all into a backpack and had room for a hoodie (in case it's chilly), an umbrella (it always rains when I'm there), a water bottle to fill up at the airport, and some snack (protein bar, couple of bags of almonds, and some peanut butter crackers).

Now its time for bed!

I Finally Tried It ...

The cheeseburger at Alexander Michael's that is!

Mondays are always a hard day to get through so why not make it easier by having a cheeseburger? Ryan and I met our friend Brandon at Al Mike's for some dinner tonight. After glancing at the menu I knew I was ordering the half-pound burger with American cheese and bacon. On the side I had the onion rings.

It was delicious! The hamburger was perfectly cooked and tasted meaty. Can't wait to run off those calories at the gym tomorrow.

The book was an easy read and included tips from Kara for women interested in running.  I liked how she added her own personal anecdotes to describe her journey as a runner.  I'll definitely use it as a reference guide for further down the line if I ever decide to run a marathon (eek) or when I become a pregnant runner (also eek).

I haven't been running lately (Thursday was the last time I ran) cause I've been feeling a little under the weather.  I'm hoping my doctor's visit today will help me determine when I can start running again.  Anxiously waiting to get back out there now that the weather has been MUCH cooler in Charlotte.

I'm sitting in my car at the parking lot for the YMCA. I would like to go inside but would like to avoid looking like a wet rat.

Power thru with a Smoothie

I spent the morning running a bunch of errands. Wednesdays are the only days that I work 12-3 and I like to take advantage of having a free morning to get things done.

Today I headed to the post office (twice!) to send back some CDs that I sold on Then I went to Target to stock up on things I really don't need but think I have to have (ie. Ball jars to make homemade pickles).

I was starving and figured a smoothie was just the thing to help me power thru the rest of my errands.

I used vanilla soy milk, a banana,frozen raspberries, and frozen blackberries.

2 miles are better than none

I didn't want to run today. It was hot outside (shocker) and I was feeling sluggish. Just when I thought I was throwing in the towel on a run today, Ryan convinced me to head outside.

We finished approximately 2 miles in probably 17 minutes. With no music and no timing devices its hard to have an exact distance and time of the run. But you know what? Sometimes it's better to run disconnected from technology.

For dinner Ryan headed up to our grills to make some barbecue chicken while I made some brown rice and corn.

Once the rice was cooked I added some lime juice and chopped cilantro to the pot. On the side I added some sliced bell peppers for an added veggie. Such an easy, but delicious, dinner!

Biking for Pasta

After getting to the YMCA today I decided I wasn't in the mood to do any running. Instead I wandered over to the cycling area and biked instead. I managed to bike for 7 miles in 35 minutes while watching "Iron Chef America" on Food Network.

I wasn't feeling too creative today so dinner was just pasta with marinara sauce. I had picked up some gluten free spaghetti the other day while at Trader Joe's and thought tonight would be a good time to try it.

I paired the pasta and red sauce with some roasted kale, garlic bread, and a small roasted bell pepper.

The dinner was quick and easy and really tasty.

Mid-day snack

Thank you Clif bar for my mid-day snack today. I picked up a new flavor while at Trader Joe's the other day ... "peanut toffee buzz."

I'm digging the flavor combination. It's chewy and sweet with just a bit of crunch. Hopefully this will help get me through my workout later today.

weekend workout

on saturday Ryan and I headed to the YMCA to get a workout out of the way before we started on our fun for the weekend.

I ran for 30 minutes on the treadmill and completed a total of 3.25 miles.  I alternated between walking for 1 minute then running for the next 9 minutes, for 3 rounds.  Then I continued my cardio workout with 15 minutes on the seated bicycle for a total of 3.0 miles.

While Ryan was finishing up his workout I did a couple of quick shoulder exercises using 5lb weights.  
  • 3 sets of 12 reps - overhead shoulder press
  • 3 sets of 12 reps - side lateral raises
We spent the afternoon at the pool and relaxed for a couple of hours before our big night out.  We headed over to Big Daddy's Burger Bar for some yummy burgers.  I went with my usual, the "Frenchie," which included a turkey patty with bacon, sliced apples, garlic mayo, and usually brie cheese but I switched it to white cheddar for something different.
After dinner we celebrated our friend Suzy's birthday by organizing a nautical themed pub crawl.  Ships Ahoy!

On Friday it was Suzy's birthday so I decided to make her some cupcakes. Red velvet is her favorite flavor so I looked up recipes and found an awesome one by Paula Deen on the Food Network website.

Runners are smelly people

Holy hell it's hot outside! I know I sound like a broken record but I can emphasize it enough.

Ryan and I joined our fellow Charlotte running group for the P-Stone run at 6:30pm. After running for 24 minutes I had finally had enough and walked for 2 minutes to catch my breath. I found a second and third wind and finished strong.
*4.47 miles in 38:15 minutes*

Now it's time to relax and enjoy some smelly runners and their company.

It's so hot!

Why oh why is it 99 degrees in Charlotte today? I snuck into Starbucks on my way back to the office after a meeting and grabbed myself this:

taco night!

I love tacos.  I love buffalo sauce.  I love buffalo chicken tacos, especially the ones I found on Jessica's How Sweet Eats blog.  I used her recipe last night to make Ryan and I a delicious meal.  I even made a side of guacamole to go along with it.
The recipe was pretty easy to follow (which is good for a mid week meal).  I cut up pieces of chicken and breaded it with a flour/corn starch/spice mixture.  I then lightly fried the chicken and eventually coated all of the little nuggets in buffalo sauce. 
The finished product was a whole wheat tortilla shell, shredded romaine lettuce, shredded cheddar cheese, some cilantro, sour cream, and a light drizzle of blue cheese dressing.  On the side I had some of my delicious guacamole (avocado, garlic, onion, tomato, cilantro, and lime juice) with some whole grain tortilla chips.  Wish I had an icy Corona to go along with it ...

Waiting at the apple store

I hate waiting. Especially after making an appointment to AVOID having to wait. I have zero patience (something that Ryan wants me to work on).

My MacBook keeps yelling at me. It says the startup disk is full and demands that I fix it. Sorry lil guy but I have no idea what to do about that. Hence me sitting at the apple store waiting for the genius bar to help me. Sigh.

Anyways I headed to the YMCA this morning for a run on the treadmill. Wednesday mornings at 8:30 are seriously the best time to go. The place is actually quasi empty and there are treadmills open.

I ran 3.35 miles in 28 minutes. I ran for 27 minutes then walked as a cooldown for 1 minute.

Once I got home it was time for some breakfast. I brought out the blender and made myself a smoothie with kale, banana, soy milk, ice, and protein powder.

10 minutes later and still no help from apple. Tsk tsk.

Mellow Mushroom

I've decided to start making more of an effort to implement cross training into my weekly workouts. Yesterday I quickly went through a bicep workout using some weights I have hiding under the bed.

I did 3 sets of 12 reps each of the following:
- hammerhead curls
- bicep curls
- concentration curls

I finished my speedy workout with 100 crunches. Then it was time to get ready for dinner with some girls I met a couple of weeks ago.

Dinner was at Mellow Mushroom and I opted to create my own 10" pizza using their red sauce, pepperoni, and pepperoncinis. Delicious!

happy tuesday!

Good morning everyone.  Hope everyone slept well last night ... I know I did.  I was dragging all day yesterday from my whirlwind trip to Florida and definitely needed some rest last night.  

Anyone watch Entourage?  Anyone else as surprised that Bobby Flay is dating Ari's wife?

We finally caught up on Sunday night's episode, and boy was it super good!

This morning I packed my breakfast to eat at work ... an apple, some vanilla yogurt, and a glass of orange juice I drank before heading out.
Looking forward to a fun night at dinner with the girls tonight.  Now if only I can just get through the work day, the gym, and THEN I can have fun.

... new month new motivation

Hello August!  After 4 days of not running, not blogging, and not eating healthy, it's good to be back.  August 1st brought a desire to turn things up this month ... it's time to get serious!

I headed to the YMCA today after work to run on the treadmill.  Thankfully I got a treadmill with a television and breezed through almost 5 miles while watching the Food Network.  I decided to take it easy today and alternate walking and running for 45 minutes.
  • walk for 1 minute at 4.5, run for 10 minutes at 6.5 (at 8 minutes I would increase the speed to 7.0 for 30 seconds)
  • total miles - 4.73 in 45 minutes (9:30 minute/mile pace)
Once I left the gym I headed straight to Trader Joe's to do some grocery shopping.  After wandering around every aisle I finally had everything I needed (and more) and headed home to start on dinner.  I had picked up Trader Joe's "Arugula Parmesan Ravioli" and paired it with a cream sauce I made with reduced fat sour cream, butter, a drizzle of olive oil, some salt and pepper, crushed pepper flakes, and parsley.  On the side I made a salad with spinach, tomatoes, sliced bell peppers, sliced black olives, and feta crumbles and used a creamy cilantro dressing.  Such a great dinner to start the week!
