Friday night it was time to carb up for my race Saturday morning. I made some pasta and tomato sauce, sausage and peppers, and garlic knots. Garlic knots are by far my favorite part of having any sort of Italian food.
The carbs must have been the secret to my PR on Saturday morning! The weather might have had something to do with it also ... 67 degrees during the race (unheard of for mid July). My goal was to run the 4 miler in 30 minutes (7:30 minute/mile pace). Well friends I did it. I actually finished the race with a chip time of 29:59 minutes. I even placed 7th in my age group.
As a celebratory meal I made homemade scallop ceviche and shrimp paella for dinner on Saturday. I even made my own tortilla chips to have with the ceviche. Much better to bake the tortillas for chips than to buy the bagged, fried variety.
Alex joined us for dinner and while he was hanging out he asked if I wanted to play golf on Sunday. Sounded like a plan to me!
We played 9 holes of golf on Sunday afternoon then headed to the movie theater to see "Horrible Bosses." If you haven't seen this movie yet GO. It is so silly and funny. I couldn't stop laughing.
Great weekend spent with some great people ... oh and throw in a PR and the weekend just gets better :)
