his and her lunch

It's always a special treat when I get to eat lunch with Ryan, and today was one of those days!

I'm trying to fight off a killer headache so my creativity levels were at an all time low when coming up with lunch.  I stuck with an easy favorite, tuna on top of a salad.
I mixed one can of tuna with 1/2 can of chickpeas.  I like adding the chickpeas for some additional protein.  To the tuna and beans I added a spoonful of reduced fat mayonnaise and seasoned it with salt and pepper and some dried dill.  The salad base is made up of spinach, cucumbers, tomatoes, with a drizzle of olive oil and red wine vinegar as a light dressing.

Lunch time success!
