grilled veggies = awesome

Today I met up with the Charlotte Runners meetup group for the usual Monday run.  It starts off at the Charlotte Running Company store and winds its way through Freedom Park/Dilworth area.  The hills are pretty intense, and although I've ran this course a handful of times, it got the best of me today.  I was pretty bummed that I stopped to walk for 1 minute around the 3.5 mile mark, but I'm glad I still finished pretty strong, considering it was 90 degrees out.
  • 4.45 miles in 36:28 minutes (8:11 minute/mile pace)
Once I got home it was time to prep dinner.  I got some veggies and chicken ready for the grill and headed upstairs to our rooftop BBQ area with Ryan.
My plate included some grilled sweet potato wedges, 2 sweet mini bell peppers, 1 quartered de-seeded tomato, 1 chicken breast, and some spicy ketchup in the center to dunk everything in.  Such a delicious and healthy meal!

Now onto my not so healthy dessert ... some more of my maple bacon ice cream ... cue evil laugh.
